Ingredients:
4 zucchinis
1 pound ground beef
1 can black beans (drained and rinsed)
¾-1 cup mild salsa
½ cup plain breadcrumbs
½-1 cup shredded triple cheddar cheese (you could also use cheddar)
2 tablespoons olive oil
¼ teaspoon garlic powder
¼ teaspoon cumin
Salt and pepper to taste
Chili powder and hot sauce (Optional)
Directions:
Wash and cut zucchini in half
Cut a small thin strip off the bottom of the zucchini so it sits on the plate flat
Scoop the middle part of the zucchini out to make them look like boats
Put zucchini in a microwaveable dish with a lid. Place in microwave for 3 minutes until they are softened
Place large pan over medium heat on stove and add olive oil, ground beef, cumin, garlic powder, and salt and pepper. Cook for about 5 minutes until meat is no longer pink and the meat is browned. drain on paper towels, wipe out pan and add ground beef back to pan.
Add in the rest of your ingredients (black beans, salsa, breadcrumbs, cheese) and turn heat to low. Stir until cheese is melted. Add ingredients into your zucchini boats and place on a plate. Microwave for 4 minutes.
These zucchini boats are a great kid friendly option. They taste great and your kids get some vegetables.
You can also omit the ground beef to make these zucchini boats vegetarian.
