Ingredients:
1 pound raw peeled and deveined shrimp
2 tablespoons olive oil
1 bottle Thai peanut sauce
½ cup chicken broth
Handful of shredded carrots
Handful of sugar snap peas
2 cloves garlic
½ yellow onion finely chopped
Fettucine noodles (I used Rana refrigerated fettucine noodles)
Salt and pepper to taste
Directions:
Bring a large pot of lightly salted water to a boil. Add pasta and cook according to package directions. With the Rana Fettucine noodles they take 2 minutes. Drain and reserve pasta.
Heat 2 cups of water to boiling in the microwave and take out a bowl and place a handful of sugar snap peas and pour the boiling water over them and let sit for 3 minutes.
In a large skillet, heat oil and cook onion for 2 minutes, add in sliced carrots and cook for 2 more minutes, add garlic in pot and cook for 30 seconds or until fragrant. Push the carrots, onion and garlic to one side of the pan and add in shrimp on the other side and cook for about 2-3 minutes, until shrimp turns pink. Add in a little bit of pepper and salt. Add in sugar snap peas, cooked pasta and peanut sauce. Add in your ½ cup chicken broth. Mix all together. Add in additional splashes of chicken broth until your noodle mixture is completely covered with sauce.
To create your own peanut sauce, add 1 cup peanut butter, ¼ cup soy sauce and 3 tablespoons honey and add 1 cup chicken stock and stir together. If you like it spicy add ¼ teaspoon chili powder.
